D-(+)-Glucono-1,5-lactone (GDL) is a naturally occurring, water-soluble lactone derived from D-gluconic acid. With a mild, slightly sweet taste, it is commonly used in the food, cosmetic, and pharmaceutical industries as a slow-releasing acidifier, coagulant, and chelating agent. Upon hydrolysis in water, GDL gradually converts into gluconic acid, lowering pH in a controlled manner-making it ideal for applications that require slow acidification.
Tofu coagulant: Commonly used in Asian food products to gently coagulate soy proteins.
pH regulator and preservative: Helps preserve taste and shelf-life in baked goods, cured meats, cheeses, and beverages.
